Sinigang na Hipon (Shrimps in Tamarind Soup)

Sinigang is one of Philippine famous dish.  Sinigang often integrated fish, pork, chicken, beef and shrimps. This time I use shrimps for my sinigang. I often use tamarind for my sinigang because I enjoyed the broth of tamarind. This dish is nutritious because shrimps contain omega 3 fatty acids, vitamin B12 and niacin. Also, it is rich with minerals, irons, zinc and copper. Aside from being nutritious, sinigang na hipon is delicious and easy to prepare.
Ingredients:

1 kilo shrimps
12 pcs. tamarind (tamarind)
1 big onion (quartered)
3 big tomatoes (quartered)
1 bundle swamp cabbage (kangkong), cut into serving piece
1 bundle string beans (sitaw), cut into serving piece
4-5 cups of water
1 big radish (sliced)
salt to taste

Procedures:

  1. Boil the tamarind until soft and tender. Extract the tamarind juice and set aside.
  2. In a casserole, add onion, tomatoes, and tamarind juice. Cover and bring to boil.
  3. Add shrimps and radish and bring to boil.
  4. Put vegetables such as string beans and swamp cabbage Simmer for 3-4 minutes.
  5. Season with salt.
  6. Remove from heat and serve.
