Pork Sinigang (Pork in Tamarind)
My family loves to eat pork sinigang because the broth is very tasty. I include lots of vegetables in my sinigang. Since I harvest okra in our backyard, I decided to include this vegetable.
This recipe is called sinigang because of the sour broth from tamarind.
1/2 kilo pork, cut into serving pieces
8 pcs. of green tamarind (sampaloc) or tamarind powder
1 medium size onion, cut into 4 pieces
2 medium size tomatoes, cut into 4 pieces
1 medium size raddish, sliced
5 pcs. okra, cut into 2
1 bundle swamp cabbage (kangkong), cut into serving piece
5-8 string beans (sitaw), cut into serving piece
5-7 cups of water
salt to taste
Procedures:
- In a casserole, boil the tamarind until soft and tender.
- Extract the juice of tamarind and set aside.
- Bring pork to boil or until the pork is tender approximately 25-30 minutes.
- Add onion, tomatoes and tamarind juice.
- Add in raddish, string beans, swamp cabbage and okra. Make sure not to overcooked the vegetables.
- Season with salt to taste.
- Remove from heat and serve
