Pork Sinigang (Pork in Tamarind)

My family loves to eat pork sinigang because the broth is very tasty. I include lots of vegetables in my sinigang. Since I harvest okra in our backyard, I decided to include this vegetable.

This recipe is called sinigang because of the sour broth from tamarind.


Ingredients:

1/2 kilo pork, cut into serving pieces
8 pcs. of green tamarind (sampaloc) or tamarind powder
1 medium size onion, cut into 4 pieces
2 medium size tomatoes, cut into 4 pieces
1 medium size raddish, sliced
5 pcs. okra, cut into 2
1 bundle swamp cabbage (kangkong), cut into serving piece
5-8 string beans (sitaw), cut into serving piece
5-7 cups of water
salt to taste

Procedures:

  1. In a casserole, boil the tamarind until soft and tender.
  2. Extract the juice of tamarind and set aside.
  3. Bring pork to boil or until the pork is tender approximately 25-30 minutes.
  4. Add onion, tomatoes and tamarind juice.
  5. Add in raddish, string beans, swamp cabbage and okra. Make sure not to overcooked the vegetables.
  6. Season with salt to taste.
  7. Remove from heat and serve
