Pinakbet or Pakbet (Sautéed Vegetables)
Pinakbet or Pakbet is one of Filipino recipe. I considered it as healthy meal because this recipe is a combination of different vegetables. There are many variations or style of cooking of pinakbet. Mine is a simple combination of vegetables.
I serve pinakbet with a combination of fried fish or fried chicken to complete one meal.
Ingredients:
1 small garlic head, minced
1 medium size onion, sliced
1 medium size squash, cut into serving portion
1 bundle of string beans (sitaw), cut into medium size pieces
6 pcs. okra, cut into 2 pcs.
1 medium size bitter melon (ampalaya), sliced – optional
1 tsp. cooking oil
1/4 pork with fat, cut into small pieces
1-2 cups water
Salt to taste
Procedures:
- In a pan, heat oil and fry pork until brown and crispy and set aside.
- Sauté onion, garlic and pork in the same pan.
- Add string beans, squash, ampalaya, and okra. Make sure that the veggies are not overcooked.
- Add salt to taste.
- Remove from heat and serve.
