Chicken Afritada

I decided to cook chicken afritada for lunch.  Surely, my daughter will like it.

Ingredients:

1 kilo chicken, cut into serving pieces
6 pcs. hotdog, sliced
3 pcs. medium size potatoes, peeled and cut into cubes
2 pcs. medium size carrots, peeled and cut into cubes
1 head garlic, minced
1 medium size red onion, diced
1 green bell pepper, sliced into strips
1 red bell pepper, sliced into strips
2 cups chicken stock (broth)
1 cup tomato sauce
Salt and pepper to taste
3 tablespoons of cooking oil

Preparations:

  1. Saute onion and garlic into pan.
  2. Add hotdog and chicken.
  3. Pour water and bring to boil. Add tomato sauce and simmer for about 20 minutes or until the chicken is almost cooked.
  4. Add potatoes and carrots.  Continue to cook for 10 minutes.
  5. Put green and red bell peppers, simmer for 2 to 3 minutes.
  6. Salt and pepper to taste.
